All about Sabor – Mayfair’s latest gem
Opened by Nieves Barragan and José Etura, Sabor is inspired by traditional cooking techniques and a laid-back attitude to dining. The menu is constantly changing, with dishes ranging from fresh fish to Spanish regional dishes like croquetas (croquette) and gambas (shrimp).
Nieves, who heads the team with José Etura, was raised in Bilbao in northeast Spain’s Basque Country and moved to London 20 years ago. He launched London’s critically acclaimed Barrafina restaurants on Adelaide Street/Drury Lane and was the proud recipient of a Michelin Star in 2014. José, meanwhile, was born in Valladolid in northwest Spain’s Castile region and moved to London in 2007. Here, he joined Barrafina, where he worked his way up from a glass polisher to the operations director by 2015, before moving to Sabor.
The Asador
Opening on 1st March, Sabor’s Asador will be an exquisite new dining space with communal tables and an open kitchen. Accessible via a beautiful spiral staircase, it will include delicacies from the Galicia and Castile regions, with dishes cooked in wood-fired ovens (known as ‘asador’) so guests can enjoy an authentically Spanish dining experience.

Sabor takes walk ins only and operates on a first-come-first-served basis for the restaurant area (for up to 4 guests) and the bar.
How to get to Sabor
You can find Sabor at 35-37 Heddon Street, just moments from Regent Street. It’s just a short walk from Piccadilly Circus station (Bakerloo, Piccadilly), which offers easy access to London Bridge, St Pancras and some of the top event venues in London.
